- 1 large bunch of collard greens cleaned and chopped
- 4 slices of bacon chopped
- 1 medium onion diced
- 3 cloves of garlic minced
- 4 cups chicken or vegetable broth
- 1 tablespoon apple cider vinegar
- 1 teaspoon red pepper flakes optional
- Salt and pepper to taste
Cook the Bacon: In a large pot or Dutch oven, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.
Sauté the Aromatics: Add the diced onion to the pot and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another minute.
Add the Collard Greens: Gradually add the chopped collard greens to the pot, stirring until they begin to wilt.
Pour in the Broth: Add the chicken or vegetable broth, apple cider vinegar, and red pepper flakes. Bring to a boil, then reduce heat and simmer for 45 minutes to 1 hour until the greens are tender.
Season and Serve: Stir in the bacon, and season with salt and pepper to taste. Serve hot as a side dish.
