  • 4 medium potatoes peeled and diced

  • 2 cloves garlic minced
  • 4 cups chicken or vegetable broth
  • 1 cup milk or heavy cream
  • 2 tablespoons butter
  • 1 teaspoon salt adjust to taste

  • ½ teaspoon smoked paprika optional
  • 1 cup shredded cheddar cheese optional
  • 4 slices cooked bacon crumbled (optional)

Instructions
 

  • Prep the Ingredients: Peel and dice the potatoes, chop the onion, and mince the garlic.
  • Sauté Aromatics: In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until fragrant and translucent (about 2-3 minutes).
  • Cook the Potatoes: Add the diced potatoes and broth to the pot. Bring to a boil, then reduce the heat to medium-low and simmer for 15-20 minutes, or until the potatoes are tender and easily pierced with a fork.
  • Blend the Soup: Use an immersion blender to puree the soup until smooth, or transfer it in batches to a blender. For a chunkier texture, leave some potato pieces intact.
  • Add Creaminess: Stir in the milk or heavy cream. Heat gently over low heat without bringing it to a boil. Adjust seasoning with salt, pepper, and paprika, if using.
  • Optional Additions: If desired, stir in shredded cheddar cheese until melted and creamy.
  • Serve: Ladle the soup into bowls and top with crumbled bacon, green onions, or parsley. Serve hot with crusty bread or crackers on the side.
