- 2 pounds russet potatoes peeled and diced
- 1 head of garlic roasted
- 1/2 cup unsalted butter
- 1/2 cup heavy cream or milk
- Salt to taste
- Black pepper to taste
- Chopped chives for garnish optional
Prep the Potatoes: Peel and dice the potatoes into even chunks for uniform cooking.
Boil the Potatoes: In a large pot, cover the potatoes with cold water, add a pinch of salt, and bring to a boil. Cook until the potatoes are fork-tender, about 15-20 minutes.
Roast the Garlic: While the potatoes cook, wrap the garlic head in aluminum foil and roast in the oven at 400°F (200°C) for about 30-35 minutes until soft and caramelized.
Drain and Mash: Once the potatoes are cooked, drain them and return to the pot. Squeeze the roasted garlic into the pot. Add the butter and cream.
Mix: Use a potato masher or hand mixer to mash until creamy. Season with salt and black pepper to taste. Adjust the consistency with more cream if desired.
Serve: Transfer to a serving bowl, garnish with chopped chives if using, and enjoy warm.
